4 slices of Bayonne jam Manex (18 monts maturation) PGI*

These slices come from “Manex” pigs that are locally farmed in the Basque Country. These pigs have been farmed for a minimum of 9 months, until they weigh about 180kgs. The ham is then dried and matured for a minimum of 18 months after which it weighs between 8 and 9kgs.
Tasting advice : take out 4 slices of Bayonne ham from the refrigerator 30 minutes before the tasting. Dry ham is best when tasted at room temperature. Indeed, it is the fat of the ham that gives it its unique taste, it must be a little fondant to sublimate the flavors of meat. Once opened, consume your dry ham pack of Bayonne within 48 hours.
Pork leg, Salies-de-Béarn salt, sugar, preservative : salpeter.
Maturation: 18 months minimum.
