Preservation: our IGP ham Bayonne ham is boned and then reconditioned in quarter. Easy to store, simply place it in a clean, damp cloth in the crisper drawer of the refrigerator. It will keep for a month minimum.
Tasting tip: take out your quarter of Bayonne ham from the fridge fifteen minutes before eating. Thus, at room temperature, the tasting will be optimal. Cut some thin or thick slices, chips, or cubes to pan with a sharp blade. Then smell it and let it melt in your mouth.
Maturation: 10 months minimum.
