Our dry sausage is hand-crafted: firstly a PGI pork meat from the Southwest chopped and pushed into a 100% natural casing. Second, a ripening of three weeks, still in our dryers at Arzacq-Arraziguet (64- Pyrénées Atlantiques). The “flower” that develops on our cured meat is totally natural, it guarantees our dry products optimal preservation.
